Raw Coconut Oil (sometimes mistakenly called coconut butter) is the oil extracted from raw coconuts, the fruit of the coconut palm, Coco nucifera. With a melting point of 25ºC it is white when solid but otherwise a clear oil.
Predominantly medium chain fatty acids (MCFA), with roughly 92% saturated fatty acids, 5-10% monounsaturated fatty acids (oleic acid) , and 1-2% polyunsaturated fatty acids (linoleic acid). Of the saturated fatty acids, coconut oil is primarily lauric acid (45-53%), myristic acid (16-21%), palmitic acid (7-10%) and caprylic acid (4-10%).
Added to your raw chocolates, coconut oil adds even more smoothness, though they melt even quicker! Also try a little added to your smoothies or raw hot chocolate.
